No, this is not just your average guacamole…but it’s just as simple! Surprise your guests (and your taste buds) with this vibrant take on a party classic.
To finish it off, I add diced jalapeño for just a bit of heat, and queso fresco (easily substituted with feta) for some extra salty goodness. Don’t get me wrong, I LOVE regular guacamole! But if you’re like me and eat it minimum once a week (or day…shhhh), why not switch it up and try something just as easy and delicious, but slightly more exotic! Serves: 8-10 as a snack
Ingredients
3 avocados
Juice of 2 limes
Zest of 1 lime
1/4 cup + 1 tbsp. diced mango
1/4 cup + 1 tbsp. pomegranate seeds
1/4 cup diced red onion
1/2 jalapeño, diced
1 tbsp. chopped cilantro + a few leaves for garnish
1 tbsp. queso fresco or feta cheese
1 tsp. salt
1 tsp. fresh ground pepper
Instructions
1. Scoop avocado from the skin and smash in a bowl until almost smooth (I like to leave it slightly chunky)
2. Stir in 1/4 cup mango, pomegranate seeds, and red onion each. Add jalapeño, lime juice, lime zest, and cilantro
3. Taste, and add salt and pepper accordingly
4. Put the mixture into a serving dish and garnish with remaining pomegranate seeds, mango, crumbled cheese and cilantro leaves. Serve alongside tortilla chips or veggies and enjoy!
