Roasted Grape and Ricotta Crostini

Ingredients for grapes
-1 bunch each of red and green grapes
-2 tbsp. of extra virgin olive oil
-1 tbsp. of balsamic vinegar
-1 tbsp. fresh rosemary, chopped
-1 tsp each of salt and pepper
Other ingredients
-1/2 cup fresh ricotta
-1/2 tsp salt
-zest of half a lemon
-1 tbsp. good quality extra virgin olive oil + 2 tbsp.
-2 tbsp. walnuts, chopped and toasted
-1 baguette
1. Preheat oven to 400 degrees F
2. Place grapes in large bowl, and add olive oil, balsamic, rosemary, salt and pepper. Combine to ensure all grapes are well coated. Place grapes on baking sheet lined with parchment paper and bake in oven until the grapes are soft and slightly browned, and some of the skins should pop, about 17-20 minutes
3. In the meantime, combine ricotta, salt, lemon zest, and good quality olive oil
4. Cut baguette into thinly and on a diagonal, and drizzle with 2 tbsp. of olive oil. Season with a pinch of salt and pepper, and toast in the oven until browned, about 3-5 minutes
5. Serve as you wish! I served mine with the grapes on the vine and the ricotta in a small jar next to the toasted crostini, but you can also prepare these crostini yourself and save work for your guests!
