Tomato salad with garlic chili oil and fresh basil

Sliced tomatoes are a perfect fresh side dish for any meal, and they are so so easy to prepare! Let the tomatoes shine in the summer when they are beautiful and fresh, and enhance their flavour with just a few simple ingredients.

Tomato Salad with Garlic Chili Oil

Ingredients

  • 1 Tomato (you pick your type!)
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Crushed red chili flakes
  • 1 Garlic Clove
  • 1/2 tsp Salt
  • 1 /2 tsp Pepper
  • 1 Handful of fresh basil

Instructions

  1. Combine the olive oil and chili flakes in a small bowl. Using the flat part of your knife and the palm of your hand, smash the clove of garlic, but try to keep it mostly in one piece.* Put the garlic into the oil, and heat the oil for 45 seconds in the microwave. Set aside to allow the flavours to infuse and the oil to cool.

  2. Slice the tomato and arrange on your serving plate. Garnish with fresh basil leaves, and season well with salt and pepper.

  3. Once cool, remove the garlic clove from the oil and discard. Drizzle the chili oil over the tomatoes and serve! 

Recipe Notes

*I often use this technique in salad dressings or infused oils where I want a mild garlic flavour. Smashing the garlic allows it to release some of its flavours into the oil/vinaigrette/dressing, but without leaving that overpowering raw garlic taste that you get from just mincing the garlic and combining it in. I LOVE garlic, but tomatoes are so beautiful and fresh in the summer and can be overpowered by garlic.
