If you know me, you know I eat a salad EVERY DAY of the week. Salads are my go-to healthy packed lunch, my dinner-in-a-hurry, and my favourite way to highlight fresh, seasonal ingredients. Salads don’t have to be boring iceberg lettuce with bottled dressing, nor should salads shouldn’t feel like a chore! I love to load my salads with flavourful sources of protein, bright pops of colour, crunchy elements, and of course, a light, fresh, homemade dressing.
