Lemongrass Margarita
Ingredients
For the lemongrass simple syrup:
1 cup sugar
1 cup water
1 stalk lemongrass
4 slices of fresh ginger
For the cocktail:
Fresh ginger
Handful of fresh cilantro
1 oz fresh lime juice, about 1 lime
¾ oz simple syrup
2 oz tequila
Sea salt for glass rim
Slice of lime for garnish

Instructions
- Make the simple syrup: Prepare the lemongrass by removing the thick outer layers. Use the dull side of a knife to smash the lemongrass stalk, and then divide into 3 smaller pieces. Combine water and sugar with fresh ginger slices and lemongrass in a pot over medium-high heat. Bring to a simmer, and allow to cook until reduced and syrup-like consistency, about 15 minutes. Remove from heat and allow to cool.
- For the cocktail: add 2-3 fresh ginger slices and a handful of cilantro to the cocktail shaker. Use a wooden spoon to smash the ingredients to release their flavour. Add simple syrup, lime juice, tequila, and a big handful of ice to the shaker. Shake well for 30 seconds. Use a lime wedge to wet the rim of a glass, and dip the rim into sea salt for rimmer. Place fresh ice in bottom of glass, strain cocktail contents into glass. Garnish with a slice of lime and fresh cilantro. Bottoms up!
